Crunchy Paneer Sub

We Indians, have indulged ourselves with various types of Pav (Indian Bread) let it be with Pav Bhaji, Vada pav, Dabeli, or a plethora of many such dishes found across our luxurious food street. In Fact, we have adapted a few western practices to suit our style of preparation. Among the various tasty dishes we have adapted from the western world, nothing has been as bold as the street side burger. The mix of paneer into our pav has proved to be an exhilarating experience! Especially in the form of crunchy paneer sub!

The indian cottage cheese AKA Paneer is a common household item found in every vegetarian home. Every function remains incomplete without its presence and everyone loves to indulge in it in various forms. Today we are going to take up an mouthwatering adventure of one such variety.

Ingredients Required for Crunchy Paneer Sub:

  • Paneer: 200 grams/half a pound
  • Mayonnaise: 1/2 cup
  • Capsicum: 1 diced
  • Onion: 2-large, chopped
  • Cucumber: 1/2, sliced
  • Tomato: 1 large, sliced
  • Carrot: 1 small, sliced
  • Beetroot: 1/2cup, grated
  • Garlic powder: 2 teaspoon
  • Onion Powder: 1 teaspoon
  • Oregano: 1 teaspoon
  • Chili flake: 1 teaspoon
  • Chilli Powder: 1/2 teaspoon
  • Coriander Powder: 1/2 teaspoon
  • Chat Masala: 1/2 spoon
  • Salt: To taste
  • Sugar: 1 tablespoon
  • Soy Sauce: 1 tablespoon
  • Tomato Ketchup: 2 teaspoon
  • Chilli Sauce: 1-2 teaspoon (optional)
  • Cornflake: 100 gram/ 0.25 pound
  • Water: 1-1.5 liter
  • Vinegar: 2-3 teaspoon
  • Crushed Pepper: 3 teaspoon
  • Oil: Half cup
  • Plain flour/maida: 1 cup
  • Cornflour: 1 tablespoon

Method:

Pickled Vegetable:

  • Warm the water (850 ml) with salt (about 1 teaspoon) until it reaches boiling point, add in the vinegar and turn off the stove. Add crushed pepper mix well
  • In a large dish, add the cut carrot, cucumber, and capsicum
  • Pour the water mix into the vegetables, close it with a lid, and set aside for 1 hour

Caramelized Onion:

  • In a deep pan, heat up the oil (4-5 teaspoon)
  • Add the onion, saute well
  • Add in a pinch of salt (helps to cook the onion faster)
  • Wait for the onion to become translucent, lower the flame and cook until it starts turning brown
  • As soon as it starts turning brown, add 60-70 ml of water, lower the flame, and continue cooking for a minute
  • Do not overcook, else the onion will go mushy

Beetroot Mayonnaise:

In a bowl, mix together the mayonnaise, soy sauce, a pinch of salt, grated beetroot, chilli sauce, and tomato ketchup. Make sure it’s a smooth mix with all the ingredients mixed well.

Crunchy Paneer deluxe:

  • Crush the cornflakes with hands. Do not use a mixer blender here as we need the corn flakes powder to be flaky and not fine
  • To the crushed corn flakes, add oregano, chilli flakes, chat masala, coriander powder, garlic powder, onion powder, and give it a good mix
  • In a deep dish, add the plain flour, a heaped tablespoon of cornflour, chilli powder, a spoon of oil, and mix well. To this mix add water in batches until you get a slurry that is not too thick nor thin.
  • Slice the paneer to medium-sized pieces (based on your pav size)
  • Take a piece of paneer, add it to the slurry, and coat it well
  • With light hands, move the coated paneer to the dish with corn flakes. Mix well until all the sides of the paneer is coated with a layer of cornflakes mix.
  • Continue doing so with all the paneer slices, line them in a plate and refrigerate for a half-hour.
  • After half hour, heat the oil until it’s hot, lower the flame and drop the coated paneer into it based on the pan capacity. Fry in a medium-high flame until golden brown on both sides.

Assembling the Crunchy Paneer Sub:

  • Cut the pav horizontally in the middle. Toast it on a Tawa with a bit of butter if required. I have not toasted it here
  • Apply beetroot mayo on both the sides
  • On the bottom half, place a piece of pickled cumber, top up with carrot and add place the block of crunchy paneer deluxe
  • Add a piece of pickled capsicum, sliced tomato, & another piece of pickled cucumber
  • Add-in caramelized onion and seal the sub with the top half
  • Optional: You can add cheese slice or grated cheese, pickled cabbage, lettuce as per your taste

Enjoy this sub with a portion of peri-peri french fries and cold coffee/hot chocolate for a wholesome experience 🙂
