Fruit cakes are an all-time favorite for most of us. I have added a Rosey twist to it and have experimented on making the cake more healthy for a guilt-free indulgence 😛 Now let’s get ready to make this Rose and Fruit Whole Wheat Wine Cake.

Ingredients:

  • Whole wheat flour (Atta): 1.5 Cup
  • Sugar (powdered): 1/2 Cup
  • Butter (softened) : 150 gm
  • Fresh curd: 1 Cup
  • Baking Powder: 1/2 Teaspoon
  • Baking Soda: 1 pinch
  • Water: 1/4 Cup
  • Baking Chocolate: 1/3 cup
  • Tutti fruity: 50 gm
  • Choice of dry fruits: 50 gm
  • Chopped mixed nuts: 25 gm
  • Red wine (Sweetened): 1/4 Cum
  • Orange zest: 1 Teaspoon
  • Vanilla essence: Half a Teaspoon
  • Rosewater/ Essence: 1 Teaspoon
  • Gems/Skittles: 1-2 Packets

Pre-work for Rose and Fruit Whole Wheat Wine Cake:

In a bowl mix together the tutti-frutti, chopped mixed nuts, chopped dried fruits, Orange zest and wine. Let it rest for 20 halfhour

Cake Batter:

  • In a deep dish bowl, add 100g softened butter and whisk it to a smooth lump-free whipped texture
  • Add 1/4 Cup of the powdered sugar and mix it well
  • In a sieve bring together the whole wheat flour, baking powder, baking soda, and sift it into the butter-sugar mix
  • Add the curd to it and mix it well. Let this mix rest for a minute or two in order for the curd to react with the baking powder
  • Now add the wine-dry fruit mix to this batter mix and mix it with light hands
  • Add the vanilla essence into the mix
  • If the batter is thick, add about half a glass of water to loosen it
  • Add it into a cake mold and tap it from side to side to side

Setting up the oven:

Pre heat the oven at 180 degrees for 20 minutes

Baking:

  • Bake the cake at 180 degrees for 35 minutes. Pick the cake with a toothpick at the center to check if it’s ready
  • If the cake is undercooked bake it for 5 more minutes

Preparing the Chocolate Rose frosting:

  • Set up a water bath to melt the chocolate
  • Set up the water bath by heating water in a deep dish bowl.
  • Place an empty bowl on top of the water setup
  • Add the chocolate and remaining butter to this bowl and stir it to a smooth mix
  • Add in the 1/4th cup of sugar and mix it to get a glossy chocolate syrup
  • Turn off the stove and mix the rose water/ essence into the mix based on your taste

Setting up the Rose and Fruit Whole Wheat Wine Cake:

  • Place the cake on a wire mesh
  • Pour the chocolate-rose syrup on top of it
  • Level the syrup using a spoon or spatula
  • Decorate it with Cadbury Gems or Skittles and let it set

Enjoy this cake with some hot chocolate for a chocolatey indulgence or with a cup of tea for a refreshing experience.
