Peri-Peri Garlic dip with Nachos Chips

Nacho, Nacho, Nachos.. this dish is middle eastern yet global. We have seen multiple vendors selling nachos chips in puffed up packets in different flavors and yet, nothing can beat the home made flavor. In this blog, we will be exploring the home made style nachos chips that’s quiet easy, tasty and kind of addictive. Let’s jump in

Ingredients required to make Nachos chips:

  • Maize Flour: 1 cup
  • All purpose flour: 3 table spoon
  • Baking soda: A pinch
  • Onion powder: 1 teaspoon
  • Garlic powder: 1 teaspoon
  • Paprika powder: 1/2 teaspoon
  • Sugar: 1/2 teaspoon
  • Oregano: 1 teaspoon
  • Chilli Flakes: 1 teaspoon
  • Salt: To taste
  • Warm water: 1/2 cup (enough to make a dough)
  • Oil: To fry as well as add in the dough

Method to make Nachos chips:

  • Sieve the maze flour and all purpose flour in to a bowl. Remove/crush any lumps in the sieve
  • Add the onion powder, garlic powder and paprika and mix well
  • Now, add in the baking soda. Make sure to mix it well in order to avoid any health issues caused due to consumption of unmixed soda
  • Add the salt and sugar now
  • Heat 2 tablespoon of any oil that has no odour to it. I used rice bran oil here. Make sure its warm and not hot. Add this warm oil to the dry mix
  • Add in chilli flakes and oregano
  • Now, add the warm water in batches and mix to get a soft dough. Add the water only in batches as excess water will lead to a sticky dough which would retain oil when fried.
  • Once you get a soft dough, cover it with a moist cloth and let it rest for 10 minutes
  • As the dough rests, heat the required amount of oil into a pan. The oil here can vary but what we are looking for is enough oil to deep fry the nachos
  • Now, take a small portion of the dough, roll it into a circular disk. Make horizontal and vertical cuts using a pizza cutter to get triangle shaped dough
  • Once the oil is heated up, add the nacho chips dough into it and deep fry until they are golden brown.
  • Once golden brown, strain them on a tissue paper to remove any excess oil
  • Garnish with a mix of garlic powder and paprika. You can also garnish using parmesan cheese for an extra kick

Tips:

  • You can make a peri-peri seasoning to garnish the nachos. For peri-peri mix, mix together half tea-spoon of paprika powder, onion powder, garlic powder, coriander powder, cumin powder, sugar and a pinch of salt
  • Use warm water only as maize flour dough needs it
  • You can use vegetable/sunflower oil instead of rice bran oil
